A lot of people diss Starbucks, but I love it. I wouldn’t necessarily have a regular latte there, but I do enjoy my fancy frou-frou drinks. In Melbourne, a city renowned for its coffee snobbery it’s a big deal to admit that you like Starbucks coffee. But there. I’ve admitted it.

When Starbucks release a new flavour it’s pretty much the highlight of my year. Unfortunately, in Australia we don’t get the massive variety of flavours that can be found in the US, but every so often a new flavour does come out and without a doubt I’ll be first in line to try it. One Starbucks staple that can be found all around the world is the Caramel Macchiato. The Caramel Macchiato was my first foray into the world of flavoured caffeinated beverages. One sip and I was hooked. Since then other drinks have come and gone (Cinnamon Dolce Latte, White Chocolate Mocha, Christmas Cookie & Toffee Nut Latte, just to name a few) but the Caramel Macchiato has stood the test of time and seasons.

In honour of my favourite classic Starbucks beverage, I attempted to remake the Caramel Macchiato in donut form since I (like the rest of Melbourne) have  recently become donut obsessed. With a bit of experimentation, I was able to create a donut that is a close match to the Caramel Macchiato. It has bitter coffee undertones, a hint of vanilla, a creamy topping and a drizzle of sweet caramel.

Coffee Donuts


2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1 tbs cocoa powder
1/4 cup milk
1/2 cup coffee
1/2 tsp vanilla extract
3 tbsp molasses
30 grams butter


1. Preheat oven to 210 C
2. Whisk together flour, sugar, baking powder and cocoa powder in a bowl.
3. Whisk in milk coffee, vanilla, molasses and melted butter to your flour mixture.
4. Spray donut pan with non-stick spray
5. Spoon donut mixture into the pan.
6. Bake for 8 minutes.

Caramel Macchiato Donuts

Vanilla Frosting


30 grams butter, room temperature
1/2 cup marshmallow fluff
1 cup icing sugar
1 tbsp milk


1. Beat the butter, marshmallow fluff, icing sugar and milk together until smooth.
2. Spread the icing over the cooled donuts (a little spatula works best for this)

Caramel Macchiato Donuts

Caramel Drizzle


1 cup white sugar
1/4 cup water
1 tbsp glucose syrup
1/2 cup cream
30 grams butter


1. Put the sugar, water and glucose in a saucepan and bring to a boil over medium-high heat, whisking until the sugar is dissolved.
2. Once the mixture has begun to turn caramel in colour (this happens quickly so keep a close eye on it or else it will burn) remove from heat.
3. Immediately whisk in the cream and butter until the caramel is smooth.
4. Let the sauce cool to room temperature.
5. Drizzle the sauce over the top of your frosted donuts.
6. Enjoy!

  1. My order is also a caramel macchiato but I see that they’ve now got a honey vanilla macchiato! I will have to give that a try. I am also now dying for a donut.
